Servings 5-6

 

材料:

 

辣肉餡醬:

800克 碎番茄罐頭

1湯匙 橄欖油

1瓣 大蒜(去皮)

1/2 紅洋蔥(切碎)

1杯 新鮮香菜

1湯匙Regency®孜然粉

1 湯匙 Regency®牛至

1湯匙 Regency®紅椒粉

1茶匙鹽

1茶匙Regency®蒜粉

1 茶匙 Regency® 卡宴紅辣椒粉

1茶匙 糖

2 茶匙 Regency® 芫茜粉

黑胡椒

 

辣餡料: 

1湯匙 橄欖油

1 瓣 蒜蓉 (切碎)

1/2 紅洋蔥 (切碎)

1個 甜椒(切碎)

2個 翠玉瓜 (切碎)

 

配料: 

425克 黑豆(瀝水後沖洗)

1 1/2杯 冷凍玉米

6個 墨西哥餡餅皮(玉米餅)(約22厘米/9寸寬)

200克 磨碎的芝士

 

Ingredients:


Enchilada Sauce:
800g crushed canned tomato

1 tbsp olive oil

1 clove garlic (whole peeled)

1/2 red onion (chopped)

1 cup fresh coriander / cilantro

1 tbsp Regency® Cumin Powder

1 tbsp Regency® Oregano

1 tbsp Regency® Paprika

1 tsp salt

1 tsp Regency® Garlic Powder

1 tsp Regency® Cayenne Pepper

1 tsp sugar

2 tsp Regency® Coriander Powder

Black pepper


Hot Filling:
1 tbsp olive oil

1 garlic clove (minced)

2 zucchinis (chopped)

 

Assembling:
425g can black beans (drained and rinsed)

 

Step 2

在不粘鍋中加熱油,加入大蒜和洋蔥炒1 分鐘,然後加入甜椒炒1分鐘,再加入翠玉瓜炒3分鐘,直到變成金黃色後離火取出備用。

Heat oil in a large non stick skillet. Add garlic and onion, cook for 1 minute. Add capsicum, cook for 1 minute. Add zucchini and cook for 3 minutes until charred. Remove skillet from heat.

 

Step 3

在砂鍋的底部塗抹一點辣肉餡醬,在中間放1個墨西哥餡餅皮,然後撕成兩半放在兩邊。

Smear a bit of Enchilada Sauce on the bottom of a casserole dish. Place 1 tortilla in the middle, then tear on in half and place on either side.

 

Step 4

在餅皮上倒入一半辣餡料,撒上一半黑豆、一半玉米,再淋上1杯辣肉餡醬和3/4杯磨碎的芝士。 

Top with half the Hot Filling. Scatter over half the black beans, half the corn. Drizzle over 1 cup Enchilada Sauce and 3/4 cup grated cheese.

 

Step 5

重複以上步驟直至填滿砂鍋。在最後一層放上墨西哥餡餅皮,然後加入2杯辣肉餡醬和撒上剩餘的芝士。

Repeat with another layer so you have 2 layers of filling. Then for the last layer, top with tortillas then cover 2 cups of Enchilada Sauce and scatter over remaining cheese.

 

Step 6

焗25分鐘或直到芝士起泡並呈金黃色,然後靜待5分鐘後即可食用。

Bake for 25 minutes or until cheese is bubbling and golden. Stand for 5 minutes then serve.
