Pancas a rare but favourite chilli in Peru.You may or may not know it, but all the world's chillies can be traced back to Central America, and as such, these chillies can be thought of as the original chillies! Panca chillies are a little spicy, and best used in stews and fish dishes. You can also use Panca chilli flakes to rub into meat before grilling. The smoky berry flavour in this chilli also greatly complements cacao, and thus is a favourite chilli to use blended with chocolates.
