Industry Knowledge: Regency Caraway Seeds are cultivated in Finland to benefit from the cool extreme northern conditions, unlike most commonly available caraway seeds. As a result, Regency Caraway seeds contain upwards of 3% and as high as 5% of the aromatic essential oils that they are so prized for. Our caraway seeds always fulfill the highest purity requirements, and are renowned for their distinctive flavour due to the higher concentration of essential oil compared to most other varieties. Regency Caraway is entirely autumn crop caraway, which is when the seeds grow to develop their best flavour characteristics.
Caraway seeds have a rich history: They are said to have been kneaded into the 'chara' (a root used to make bread) of Julius Caesar, eaten by the soldiers of Valerius. A curious superstition was held in olden times about the Caraway. It was deemed to confer the gift of retention, preventing the theft of any object which contained it, and holding the thief in custody within the invaded house. In like manner it was used to keep lovers from cheating, and also to prevent fowls and pigeons from straying.
