Industry Knowledge: Sold in a range of qualities throughout India, Sri Lanka and Madagascar, Cardamom is one of the most sought after spices for its luxuriously complex flavour profile. Of all varieties, the Green Himalayan Cardamom sold at Regency contains an immense amount of seeds, each providing the authentic wave of flavour traditionally found in Cardamom before it was mass produced. A single set of seeds is enough to provide a wave of long-lasting warm flavour. Regency Cardamom pods are able to attain this level of flavour as they are cured immediately after picking, evident from their natural vivid green colour. The cultivation region is also highly precise for obtaining such a high quality. Our large green cardamom is cultivated in the Sub-Himalayan region of North Eastern India, Nepal and Bhutan. It is grown in cold humid conditions under shade of trees at an altitude between 800-2000 meters above sea level, with an average precipitation of 3000-3500 mm spread over about 200 days and temperatures ranging from 6-30 degree C.
Due to its strong flavour, it's a spice that should be used in moderation however, it has a multitude of uses such as in teas, desserts, curries, soups and exotic sauces. Cardamom is particularly delicious when used in combination with Saffron, and can also be used on it's own. Owing to it's fresh taste and smell, Cardamom is also popularly used on its own as a mouth freshener in India.
