You may or may not know it, but all the world's chillies can be traced back to Central America, and as such, these chillies can be thought of as the original chillies! Chillies from this part of the world, like our Ancho Chilli from Peru, carry much more flavour and aroma than commonly found chillies elsewhere in the world. What they don't pack the highest punch in heat, Ancho chillies more than make up for in flavour. They're sweet and lightly peppery, reminiscient of raisins, and have a slight smoky aroma to them. Theye great ground and put into simple ingredients like potatoes, cream & tomatoes.
