In some instances, Dried Ginger is the only way to infuse Ginger into dishes. When dried and freshly powdered, this Ginger can easily be absorbed into dishes without leaving any physical traces. Alternatively, the dried form can also be used to flavour stocks and soups, then strained out later. As it's dried, the flavour is much more intense than the fresh counterparts, making convenience economical at the same time. Regency Ginger is Certified Organic unlike most Ginger on the market which commonly has added SO2 (sulphur dioxide) as well as grown with pesticides. Our ginger roots also have minimal fibres so that the spice melts more easily.

Industry Knowledge Ginger is one of the essential ingredients to authentic Chinese cooking. It's also heavily used in other Asian cuisine, such as Japanese, Indian, Korean, and Vietnamese food. Ginger is a highly fragrant spice, and dried ginger even moreso. Dried ginger has it's own special uses though. When baking gingerbread, or ginger based cakes, cookies, beer, ale and confectionary, dried ginger has no competition. It's a much stronger version of the spice, and usually 5 times less ginger needs to be used when in dried form compared to fresh. Otherwise, ginger is most often used to flavour dishes based around seafood or vegetables. If that wasn't enough, ginger is the secret to making authentic Indian Masala Chai.
Historically speaking, Ginger is a relatively new spice in comparison to others such as Cloves and Black Pepper. That said, it's still been around for around 2000+ years. Ginger is indigenous to China, where it grows best. It has since been cultivated in India, Indonesia and parts of the Carribean. However, we find that these other varieties don't carry the same flavour notes as Chinese Ginger. The Indian Ginger sold by Regency tastes more sweet. Furthermore, in our Ginger, the citrus aroma is more stronger and pronounced.
