    Regency® 斯里蘭卡咖喱粉 Sri Lankan Curry Powder

    Servings: 6

     

    材料:

    1 1/2 大匙 花生油

    1.2公斤 牛肩肉排(切成3厘米)

    1 片 啡洋蔥 (切薄片)

    3瓣 蒜 (切碎)

    1大匙 新鮮薑 (切碎)

    1條 新鮮青辣椒 (去籽、切薄片)

    2.5 大匙 Regency® 斯里蘭卡咖哩粉

    2茶匙 雞粉

    180ml 番茄泥

    350克 去皮番薯(切成3厘米)

    270ml 罐裝椰奶

    2大匙羅望子醬

    3茶匙 黑糖

    加熱後的印度煎餅 (上菜用)

    白飯(上菜用)

     

    Ingredients: 

    1 1/2 tbsp peanut oil

    1.2kg beef chuck steak (cut into 3cm pieces)

    1 brown onion (thinly sliced)

    3 garlic cloves (finely chopped)

    1 tbsp fresh ginger (finely chopped)

    1 long fresh green chilli (deseeded, thinly sliced)

    2.5 tbsp Regency® Sri Lankan Curry Powder

    2 tsp chicken stock powder

    180ml passata

    350g peeled sweet potato (cut into 3cm pieces)

    270ml can coconut milk

    2 tbsp tamarind puree

    3 tsp brown sugar

    Roti bread, warmed, to serve

    Steamed rice, to serve

     

    Step 1
    在一個大鍋中用大火加熱1湯匙油。將牛肉分批煮5分鐘或直到均勻變色,然後將牛肉轉移到慢燉鍋中。

    Heat 1 tablespoon oil in a large frying pan over high heat. Cook the beef, in batches, for 5 minutes or until evenly browned. Transfer the beef to a slow cooker.

     

    Step 2
    在鍋中加熱剩餘的2茶匙油。加入洋蔥後調至中火,煮5分鐘或直到變軟,期間間中攪拌。

    Heat the remaining 2 teaspoons oil in the pan. Add the onion. Reduce heat to medium. Cook, stirring often, for 5 minutes or until tender. 

     

    Step 3

    加入大蒜、生薑和辣椒,翻炒1分鐘或直到有香味,然後加入Regency® 斯里蘭卡咖哩粉攪拌均勻。再加入雞粉、番茄泥和250毫升水,攪拌均勻。

    Add the garlic, ginger and chilli. Cook, stirring, for 1 minute or until aromatic. Add the Regency® Sri Lankan Curry Powder. Stir to coat. Add the stock powder, passata and 250ml (1 cup) water. Stir to combine.

     

    Step 4
    將咖哩混合物倒入慢燉鍋中,然後加入番薯、椰奶、羅望子醬攪拌均勻。蓋上蓋子,用大火煮4小時或直到牛肉變得非常軟嫩。加入黑糖攪拌和調味,然後配上印度煎餅和白飯即可享用。

    Pour the curry mixture into the slow cooker. Add the sweet potato, coconut milk, tamarind. Stir to combine. Cover and cook on High for 4 hours or until the beef is very tender. Stir through the sugar and season. Then serve with roti and rice.
