Servings: 6 big chunky cookies

材料:

濕材料:

100克 Regency®去核帝王椰棗

85毫升 沸水

1隻 雞蛋

3湯匙 楓糖漿/蜂蜜

3湯匙 融化的椰子油/其他普通油

1 條 Regency®雲呢拿籽

 

乾材料:

1 1/4 杯 燕麥片

1/2杯 Regency®杏仁片

1/4 杯 Regency®椰絲

1/2 杯 Regency® 棕葡萄乾

3/4杯 Regency®杏仁粉

1/2茶匙 泡打粉

1/2茶匙Regency®錫蘭肉桂粉

 

Ingredients:

Wet Ingredients:

100g Regency® Small Seedless Medjool Dates

85 ml boiling water

1 egg

3 tbsp maple syrup / honey

3 tbsp melted coconut oil / other plain oil

1 Regency® Vanilla Beans

 

Dry Ingredients: 
1 1/4 cups rolled oats

1/2 cup Regency® Sliced Almonds

1/4 cup Regency® Desiccated Coconut

1/2 cup Regency® Brown Raisins

3/4 cup Regency® Almond Flour

1/2 tsp baking powder

1/2 tsp Regency® Ceylon Cinnamon Powder

 

Instructions 步驟

Step 1

將焗爐預熱至180°C,在焗盤上鋪上牛油紙。

Preheat oven to 180°C. Line a tray with baking paper.

Step 2

將椰棗隨意切碎,放在碗裡加入水,水的高度要蓋過椰棗,然後蓋上蓋子浸泡10分鐘以上。用叉子壓碎直至它變成糊狀。

Roughly chop dates. Place in bowl, pour over water. Cover and leave to soak for 10 minutes+. Then mash with a fork until it becomes a paste.

 Step 3

加入剩餘的濕材料攪拌均勻,然後加入乾材料。攪拌至所有乾材料都均勻混合,變成濃厚的麵糊。

Add remaining Wet ingredients and mix well. Then add Dry ingredients. Mix until all flour is incorporated, it should be a thick batter. 

Step 4

將麵糊分成6個曲奇麵糰,焗20 分鐘直至金黃色。從焗爐中取出,放在托盤上冷卻後即可食用!

Separate the batter into 6 large cookie dough. Bake 20 minutes until golden. Remove from oven, leave to cool on the tray then serve!
