Compared to ordinary pepper, these KampotPeppercorns are a totally different game. These peppercorns smell citrusy and carry some great delicate citrus, mint and hot pepper flavour notes, making them quite unique. White Kampot Peppercorns are peppercorns harvested at their full maturity and then washed to strip away the black outer layer. This washing process is done twice and paying careful attention to moisture levels before and after to ensure a crisp and delightful peppercorn after.

Much like our Malabar Black Peppercorns, Kampot Peppercorns are a region protected product, much like Champagne, meaning they can only be legally marketed as Kampot if they are grown in a specific region of Cambodia, have the farm certified and licensed by the local government and grown to specific standards, and the process repeated each year. This adds a tremendous cost and scarcity to anotherwise simple gift from nature.

Usage: They can work with fresh caught seafood, and also in Cambodia's favourite curry dish Fish Amok - with lemongrass, coconut and turmeric.

It's a great peppercorns I use before

These Kampot peppercorns are not cheap, but, like an AOC wine, they are certainly worth the price. This is not a pepper for tossing carelessly into a seasoning mix, but one to consider in a careful blending. I have been using Kampot Red exclusively in my on-the-table grinder for some time now. It's delicate, almost floral pungency is to be relished over a light, French-style omelette with a little Parmigiano Reggiano.
Now for the white. I grind my own Quatre Épices, the ubiquitous French spice mix. And what an extraordinary lift the white Kampot gives it. Highly, highly recommended.
