This Maharashtran curry is rapidly gaining popularity throughout the rest of India. Kolhapuri curry is known for it's thick, rich spiced and coconut flavoured gravy. Maharashtra is predominantly a vegetarian territory in India, and this curry packs the perfect balance of flavours to match it. Our recipe is milder to make it more versatile, using mild chilli powders. For a more authentic touch, we recommend to add an additional teaspoon of spicy chilli powder or cayenne pepper in a curry for 4.
Kolhapuri Masala Technical Notes:
Ingredients: Chilli Flakes, Coriander, Coconut, Cumin, Garlic, Mustard, Onion, Paprika, Black Pepper, Poppy Seeds, Sesame
Kolhapuri Masala Cooking Notes:
Serving Size: 3 grams
Usage: Steam the vegetables separately first until nearly cooked. Heat oil in a pan, add your Kolhapuri masala, chopped tomatoes and cook for a few minutes. Then add water and the vegetables. Simmer for a few minutes and serve hot.
