Chives are commonly used herb in europe and china, but less well known in the rest of the world. Dry Chives are commonly ignored as fresh chives retain a much brighter colour and aroma, but at the same time, there are some uses for dry chives where fresh absolutely don't work as well!
One great way to use dry chives is in dips and sauces. Fresh chives might be too harsh and overwhelming flavours, and also don't blend as well. Whereas dried chives could impart stronger flavours in dips and sauces. We also love the fact that dry chives could be powdered and spread far more effectively than chopping chives.
Dry Chives are a cousin of onions and leeks, with a slightly milder and sweeter flavour profile. Use towards the end of cooking, or with gentle preparation such as mixing / sauce making.
