Chironji is an ancient, native spice known and used almost exclusively in India. It's related to the nut family, and flavour could be described closest to sweet almonds crossed and a texture like a soft pinenut. They can be eaten raw, but toasting is often preferred. Chironji is extremely high in natural fats and thus very difficult to grind into a powder without turning into a thick paste. As a result, they are commonly use as a thickener in Indian pastries, pudding-like desserts, savoury sauces and batter. One of the most well known uses is in making rich, meaty Kormas due to the subtle sweet flavour.

Usage: Roast chironji seeds, and then grind into a paste using a pestle and mortar, or in an electric grinder together with other paste ingredients. Heat with oil in a pan and cook.
