A simple seasoning of our five spice powder in whole form, mixed with black peppercorns, salt and sugar to create a traditional chinese brining mix, suitable for all kinds of seafood and most meats. This is best for whole fish commonly found in southern china where the blend was developed.
Chinese Brine Spices Technical Notes
Ingredients: Black Peppercorns, Star Anise, Cloves, Cinnamon Cassia, Fennel Seed, Ginger, Sea Salt, Sugar
Usage: Mix 40 grams per 1 Litre of liquid to make your brining solution. Use enough brining solution to fully submerge your meat/fish. Let it sit underwater for 2 hours per 1kg of meat. Then remove, scrape off the brine and cook.
Please note that our ingredients are 100% natural and processed using traditional methods. As a result there may be some visible imperfections. Our spices will have variations in size and colour due to factors such as the amount of sunlight they received when growing, or the amount of rainfall in a particular season. These differences in appearance are entirely normal, and are the result of not treating them with any chemicals, reducing unnecessary hand selection, and minimizing waste.
