A must-order item on an Indian restaurant menu, this home-cooked version has all the same complexity of flavour, yet it’s so simple to make yourself. Tender chicken swims in a tomato sauce flavoured with sweet spices such as cumin, coriander and garam masala, and it’s finished with a generous slug of cream.

材料:

1/2 希臘乳酪

2 蒜瓣(壓碎)

3厘米 薑(去皮並磨碎)

2茶匙 Regency®孜然粉

2茶匙 Regency®芫荽籽粉

1茶匙 Regency®印度綜合香料

1/4茶匙 Regency®辣椒粉

600 雞腿肉(切成3厘米)

1湯匙 植物油

20 牛油

1 啡洋蔥(切厚片)

410 罐裝番茄蓉

1/2 雞湯

1/2 厚忌廉

 

Ingredients: 

1/2 cup Greek-style yoghurt

2 garlic cloves (crushed)

3cm piece ginger (peeled & finely grated)

2 tsp Regency®Cumin Powder

2 tsp Regency®Coriander Powder

1 tsp Regency®Garam Masala

1/4 tsp Regency®Chilli Powder

600g chicken thigh fillets (cut into 3cm pieces)

1 tbsp vegetable oil

20g butter

1 brown onion (thickly sliced)

410g can tomato puree

1/2 cup liquid chicken stock

1/2 cup thickened cream

 

Step 1

將乳酪、蒜瓣、薑、Regency®孜然粉、Regency®芫荽籽粉、Regency®印度綜合香料和Regency®辣椒粉放入玻璃或陶瓷盤中,加入雞肉並攪拌均勻,蓋上蓋子並冷藏2小時。 

Place yoghurt, garlic, ginger, Regency®Cumin Powder, Regency®Coriander Powder, Regency®Garam Masala and Regency®Chilli Powder in a glass or ceramic dish. Add chicken and stir to coat. Cover and refrigerate for 2 hours.

 

Step 2

鍋用中高火加熱油和牛油,然後加入洋蔥偶爾攪拌,煮34分鐘或直到變軟。將雞肉混合物加入鍋中,攪拌5分鐘或直到雞肉開始變熟,然後加入番茄蓉和雞湯蓋上蓋子煮沸。 

Heat oil and butter in a pan over medium-high heat. Add onion. Cook, stirring occasionally, for 3 to 4 minutes or until softened. Add chicken mixture to pan. Cook and stirring for 5 minutes or until chicken just starts to change colour. Add tomato puree and stock. Cover and bring to the boil. 

 

Step 3

將火溫調至低火,燉15-20分鐘,偶爾攪拌,或直到雞肉變軟,混合物稍微變稠。拌入忌廉並調味,再燉5分鐘,配上印度烤餅/米飯和芫荽即可享用🍴

Reduce heat to low. Simmer, stirring occasionally, for 15-20 minutes or until chicken is tender and mixture has thickened slightly. Stir in cream and season to taste. Simmer for a further 5 minutes. Serve with naan/ steamed rice and coriander leaves.
