A normal mac & cheese may make you feel guilty because of the calories, but have you ever thought about making a vegan Mac & cheese? Delicious vegan mac & cheese might sound like an oxymoron, but trust us, it can be done!

材料:
Panko脆表面:
2 大匙 特級初榨橄欖油
1/2 杯 Panko 麵包屑
2 茶匙 百里香葉
猶太鹽
芝士通心粉:
1 磅 中型貝殼粉/通心粉
1 大匙 精煉椰子油或植物油
1 顆白洋蔥(切碎後約 1 1/2 杯)
1/2 黃燈籠辣椒(切碎後約1杯)
1 茶匙 Regency®芥末粉
1 茶匙 Regency®孜然粉
1 1/2 杯 Regency®腰果
1 個 馬鈴薯(去皮並切粒後約 2 杯)
3 1/2 杯 水
2/3 杯 酸菜(用細網篩瀝乾)
3 大匙 營養酵母
1 大匙 白葡萄酒醋
1 湯匙 辣醬(如 Cholula)
Ingredients :
For Panko Crumb Topping :
2 tbsp Extra virgin olive oil
1/2 cup Panko bread crumbs
2 tsp Dried thyme leaves
Kosher Salt
For Mac & Cheese :
1 lb Medium shells
1 tbsp Refined coconut oil or vegetable oil
1 White onion (chopped about 1 1/2 cups)
1/2 Yellow pepper (chopped about 1 cup)
1 tsp Regency® Mustard powder
1 tsp Regency® Cumin powder
1 1/2 cup Regency® Raw cashews
1 Russet potato (peeled and cubed about 2 cups)
3 1/2 cup Water
2/3 cup Sauerkraut (drained in a fine mesh sieve)
3 tbsp Nutritional yeast
1 tbsp White wine vinegar
1 tbsp Hot sauce (such as Cholula)
Step 1 將一大鍋水煮沸,加入2湯匙鹽。煮沸後加入通心粉煮約9到10分鐘至有嚼勁後瀝水取出。
In a large, salted pot of water, boil pasta until al dente around 9 to 10 minutes. Drain.
Step 2 製作Panko配料:在平底鍋中用中火加熱橄欖油。加入Panko、百里香、鹽和黑胡椒,繼續煮至Panko呈金黃色後倒進另一個碗裡冷卻。
To make Panko topping: in a medium skillet over medium heat, heat olive oil. Add Panko and thyme, and season with salt and pepper. Cook, stirring occasionally, until Panko is golden. Transfer to a bowl to cool.
Step 3 在一個大鍋中,用中火加熱椰子油或植物油。加入洋蔥和黑胡椒煮約6分鐘至變軟,適量加鹽和黑胡椒粉調味,然後加入Regency®芥末粉和Regency®孜然粉攪拌,煮至香味後再煮1到2分鐘。
In a large pot over medium heat, heat coconut or vegetable oil. Add onion and pepper and cook until soft, 6 minutes. Season with salt and pepper, then stir in Regency® mustard powder and Regency® cumin powder and cook until fragrant, 1 to 2 minutes more.
Step 4
加入Regency®腰果、馬鈴薯和水,煮沸後煮6到7分鐘至馬鈴薯變軟。
Add Regency® cashews, potatoes, and water and bring to a boil. Boil until potatoes are tender, 6 to 7 minutes.
Step 5 當馬鈴薯煮熟變軟後,將鍋中的混合物倒進攪拌機或食物處理機中攪拌至光滑。加入酸菜、酵母、白葡萄酒醋和辣醬再次攪拌均勻至光滑,然後根據需要用鹽和黑胡椒調味。
When potatoes are tender, transfer mixture in pot to a blender or food processor, and puree until smooth. Add sauerkraut, nutritional yeast, white wine vinegar, and hot sauce. Puree again until smooth, then taste and season with salt and pepper if needed.
Step 6 將煮熟的通心粉和芝士醬放入一個大碗中攪拌混合,然後撒上Panko混合物,即可食用。
Combine cooked pasta and cheese sauce in a large bowl and stir to combine. Top with Panko mixture and serve.
