Sichuan Peppers are one of the only spices in the world that carry their trademark "numbing" flavour, which numbs your tongue without any spice. Use in combination with spicy food for a party in your mouth. Green Sichuan Peppercorns are much rarer than the red variety, as these are still mainly grown in the wild and harder to cultivate. This variety growing in Sichuan Province is one of the most fragrant varieties of Green Sichuan Peppercorns, the only other true competitor are the Sansho Peppers from Japan. Green Sichuan Peppercorns carry an unmistakable sweet citrus aroma, not found in other peppers, thus making them great to add a surprise aroma note in addition to the numbing flavour.

Usage: Fry a few Sichuan Peppercorns in hot oil until fragrant, then strain and use the oil for cooking. Green Sichuan Peppercorns are more fragrant and best reserved for milder dishes. They can also pair wonderfully with fusion-desserts such as ice creams and puddings.
