Discover a new meaning to Chilli powder with this popular Chilean spice mix that's started to make its way around chef circles only in these recent few years. Merken spice is a smoky, spicy, mild-medium heat chilli mix balanced with salt and coriander and tastes great on just about anything. Some more popular uses are as a condiment with roasted vegetables and baking potatoes. You can also mix some in an aoili to get something much taster than ordinary chipotle.

Merken Chile Spice is relatively mild on the scoville scale, but to someone not expecting the chilli bite it can still pack a punch. Use small amounts for a great flavour effect and aroma.

Directions for use: Use as a condiment with lamb, pork, or seafoods, or as a finishing spice, sprinkle onto your favourite cheese, french fries or peanuts to enjoy.
Merken Chile Corn Salad
1. Boil some sweetcorn until slightly soft, and remove kernels from the corn.
2. Mix the sweetcorn with your favourite cheese, salad greens, cherry tomatoes, smoked salmon, olives or any other salad favourites
3. Stir together 1/4 tsp Merken Chile spice with 1 tsp olive oil (per serving). Toss with the salad to combine, and serve!
