Natural Green Peppercorns from Cochin, India. Green Peppercorns are true peppercorns from the Piper Nigrum plant, and actually just really unripe black peppercorns, picked before full maturity! They're an exotic spice that need to be used quickly in fresh form, so they're often preserved in brine or vinegar and served as a pickle in India and France. The other way to keep them long-lasting is to quickly dehydrate them. Green Peppercorns cannot be sundried like normal black peppers, so prices are wildly different even though they come from the same tree. Also known as green pepper corns.
