In India, Chicken Curry can mean a different thing in every different state! However, the most popular blend of chicken curry comes from Northern India - Butter Chicken. This is a strongly spiced rich curry, more stronger than our Tikka Masala, but still mild and containing only small amounts of chillies.
More of the earthiness and rich depth of flavours is brought out, similar to our Gujarati Curry Powder, through the use of ground mustard, asafoetida and nutmeg. These flavours add more complexity to the curry which aren't lost when adding heavy cream or ample amounts of butter. The blend is also perfectly suited for chicken and contains low amount of salt already. You can add more salt to taste if you need.
ChickenåÊMasala Technical Notes
Ingredients: Green Cardamom, Cassia Cinnamon, Chillies, Coriander, Cumin, Nutmeg, Black Pepper, Turmeric, Asafoetida, Mustard, Salt
Usage: Combine 5 tsp ChickenåÊMasala with 1 tsp each of freshly grated ginger, garlic, and use for cooking a butter chicken curry. Cook with fresh chopped tomatoes, onion, and add a lot of butter and a dash of milk or cream to thicken with added gloss.

Our spices will have variations in size and colour due to factors such as the amount of sunlight they received when growing, or the amount of rainfall in a particular season. These differences in appearance are entirely normal, and are the result of not treating them with any chemicals, reducing unnecessary hand selection, and minimizing waste.
