西班牙蔬菜湯 Spanish Vegetable Soup

今次我哋整一個極度健康同超級簡單嘅食譜。簡單嚟講，你要做嘅就係將所有蔬菜、高湯同番茄放入一個煲度，煮滾之後就飲得！🍲

This time we’re making an extremely healthy and super easy recipe. Essentially, all you do is put all the vegetables, broth and tomato into a pot, bring it to a boil then that’s it!

Servings: 4-5 people 

材料: 

2茶匙 橄欖油

1個 洋蔥(切碎)

2瓣 大蒜(切碎)

1 湯匙 Regency®牛至

2 茶匙 Regency®茴香籽

2個 紅蘿蔔（切碎）

1個 芹菜莖(切碎)

2個 甜椒（切成2厘米/塊）

400克 生菜(切成3厘米/塊）

800公克 番茄蓉

750毫升 蔬菜/雞湯

鹽和胡椒粉

1個 檸檬

番茜 (切碎)

1湯匙 Regency®煙燻紅辣椒粉

1茶匙 Regency®卡宴胡椒(根據口味調整辣度)

Ingredients: 

2 tsp olive oil

1 onion (finely chopped)

2 garlic cloves (minced)

1 tbsp Regency® Oregano

2 tsp Regency® Fennel Seeds

2 medium carrots (finely chopped)

1 large celery stalk/rib (finely chopped)

400g cabbage (cut into 3cm/pc)

800g crushed tomato

750 ml vegetable / chicken broth

Salt and pepper

1 lemon – zest + juice

Finely chopped parsley 

1 tbsp Regency® Smoked Paprika

2 red capsicums / bell peppers (cut into 2cm/pc)

1 tsp Regency® Cayenne Pepper (adjust spiciness to taste)

Instructions 步驟

Step 1

在大鍋中用中火加熱油，加入大蒜和洋蔥，炒30秒左右。然後加入Regency®牛至和Regency®茴香籽，再炒2分鐘。

Heat oil in a large pot over medium heat. Add garlic and onion, cook for 30 seconds or so. Then add Regency® Oregano and Regency® Fennel Seeds, cook for 2 minute.

Step 2

將火力調至中低火，加入紅蘿蔔和芹菜煮8分鐘，期間不斷攪拌，直到洋蔥變甜（不變褐色）。

Turn heat down to medium low. Add carrots and celery, cook, stirring regularly, for 8 minutes until onion is sweet (not browned).

Step 3

加入甜椒，將火力調高至大火煮2分鐘，期間不斷攪拌。 加入剩餘的湯配料，煮沸後蓋上蓋子。將火力調低至中低火，煮25分鐘。

Add capsicum, turn heat up to high and cook for 2 minutes, stirring constantly. Add remaining Soup ingredients, bring to simmer then place lid on. Turn heat down to medium low, simmer for 25 minutes.

Step 4

取下蓋子，根據口味調整鹽和胡椒粉。將湯盛入碗中。磨出檸檬皮，擠檸檬汁，並撒上番茜後即可享用！

Remove lid, adjust salt and pepper to taste. Ladle soup into bowls. Grate over lemon zest, squeeze of lemon juice and sprinkle with parsley. Serve!
