Spicy Indian Baked Chicken Masaledar Murghi

Recipe: Indian Spicy Baked Chicken Masaledar Murghi Recipe
Ingredients:
- 6 chicken breasts
- 4 tablespoons Regency Chicken Masala
- 3 cloves garlic
- 6 tablespoons lemon juice
Cooking method:
Mash the garlic, then mix it with the Chicken Masala and lemon juice to make a paste. Wash and dry the chicken breasts. Rub the paste all over the chicken and marinate for at least 1 hour, preferably 3 hours or overnight. Cover and refrigerate if marinating overnight.
Preheat the oven to 400°F (200°C). Line a baking tray with foil, brush the chicken with a little oil and leave some space between the pieces. Bake the chicken for 20–25 minutes. Baste a couple of times with juices. Test for doneness by slicing through the thickest part of the meat to check the centre. Done when slightly pink. Remove chicken and cover for 10 minutes to let meat rest. (I used my handy silicon mat to cover, works a treat!) Pour the baking juices into a small pot and reduce the sauce until approximately 1/2 cup remains. Slice chicken diagonally into 1/2″ slices, pour sauce over and serve hot. Enjoy the spicy!
