Industry Knowledge: Carom Seeds, known as Ajwain in their homeland of India, are one of the most commonly used Northern-Indian spice. They are India's answer to Parsley. Used in the seed form, Carom seeds are slightly fried in oil to release their flavour, then added to sauces and stews to flavour them. Even a small amount of a few grams is enough to flavour a dish. In some parts of India, Carom seeds are also powdered and infused into milk, then fed to babies. Carom seeds are seldom bought in the powdered form, because their taste is very subtle and delicate - powdering drastically reduces the impact of this spice over time. It's best advised to buy whole and powder or fry when needed.
Regency's Carom Seeds are a blend of two varieties: Green and Brown. The Brown variety is commonly used for strength, and the Green variety adds the more subtle flavours. A combination of the two gives the perfect home blend enjoyed in Indian households.
