Appearance: Rough peppercorns, mixed shades of black and brown. Small stems intact.
Industry Knowledge: Cubebs originated from the West Indies, with the best product coming from the Java, Indonesia. Cubeb peppercorns taste strongly aromatic, pungent and somewhat bitter. It's a flavour much like Black Peppercorns but with more complex herbal tones. Cubeb peppercorns are grown extensively in coffee plantations, like those found in the Java, where they can be well shaded and supported by coffee trees. These traditional origins are what give the Cubeb Peppercorns their complexity and rich flavour profile, something that cannot be imitated well elsewhere. Cubebs should always be bought in their peppercorn form, not as powders, where they can be diluted with other substances.
