Recipe: Chicken Sandwich with Tarragon

I was again checking what’s on sale at Regency Spices this morning, and I saw tarragon flakes! I have hardly seen fresh tarragon sold in Hong Kong’s supermarkets (maybe I wasn’t looking carefully enough?) Tarragon when combined with homemade mayonnaise or some nice seasonings like the Jamaican Jerk Spices makes for a really good sandwich.

                     Recipe: Chicken Sandwich with Tarragon

Serving: 2


  • 1 clove garlic
  • 2-3 tsp Jamaican Jerk Seasoning
  • 2 tablespoon cooking wine
  • 220g chicken breast
  • 2 tablespoon lemon juice
  • 1 teaspoon lemon skin, zest
  • ½ apple
  • 4 tablespoon mayonnaise (if you have homemade one, that would be super!)
  • 1 teaspoon fresh tarragon or ½  teaspoon dried tarragon
  • Salt (to taste)
  • 4 slices of sandwich bread

Cooking instructions

  1. Combine the garlic and cooking wine in a medium size pot. Add 6 cups of water and bring to boil.
  2. While it’s boiling, cut the chicken breast into 4 or 5 pieces. Once boiled, reduce the heat and add the chicken and cook until the insides are no longer pink. Please do not overcook the chicken as it will harden the meat.
  3. Once the chicken is cooked, remove from the water and allow to cool. Keep 2 teaspoon of garlic water that was used for boiling.
  4. While the chicken is being cooled, zest the lemon skin in a small bowl and add the lemon juice. Dice the apple into 1cm cubes and add into the bowl.  Add the rest of ingredients as well as the garlic water and mix.
  5. Cut or tear off the chicken into bite sizes and add into the bowl and mix. Season by generously sprinkling on the Jamaican Jerk Seasoning, and optionally more salt to taste.
  6. You now have lovely chicken filling for sandwich which is beautifully scented with lemon and tarragon, and tastes spectacular with the seasoning.

Tips: (1) The apple can be substituted with other vegetables, e.g. cucumber. (2) Tarragon belongs to the sunflower family. Its leaves are used for cooking.
