Ingredients:
275g wholemeal plain flour
100g traditional oats
30g Regency® Desiccated Coconut
70ml maple syrup
1 tbsp Regency® Brown Flaxseeds Powder
2 ripe bananas
150ml coconut milk
2 tsp baking powder
½ tsp baking soda
¼ tsp Regency® Green Cardamom Powder
½ tsp Regency® Ceylon Cinnamon Powder
250g tin pineapple (chopped)

100克 燕麥
30克 Regency®椰絲
70毫升 楓糖漿
1 湯匙 Regency®啡亞麻籽粉
2個 熟香蕉
150毫升 椰奶
2 茶匙 泡打粉
½ 茶匙 梳打粉
¼ 茶匙 Regency®綠荳蔻粉
½ 茶匙 Regency®錫蘭肉桂粉
250克 罐裝鳳梨片 (瀝乾並切碎)
Step 1
Heat the oven to 190°C. Line a standard 12-cup muffin tin with muffin cases. Tip 25g of the flour, 20g of the oats and all the Regency® Desiccated Coconut into a large bowl and stir together with a pinch of salt. Add half the maple syrup and stir with a fork until combined.
將烤箱加熱到攝氏190度,然後鋪上12杯鬆餅模。將25克麵粉、20克燕麥和所有Regency®椰絲倒入一個大碗中,用少許鹽一起攪拌。加入一半的楓糖漿,用叉子攪拌至混合。
Step 2
To make the flax egg, combine the Regency® Brown Flaxseeds Powder with 3 tbsp of water in a small bowl. Let it sit for about 5 minutes until thickened.
製作亞麻籽蛋漿,在一個小碗中將Regency®啡亞麻籽粉與3湯匙水混合,靜置約5分鐘,直到變稠。
Step 3
Mash the bananas in a medium bowl and whisk in the flax egg, coconut milk and the remaining maple syrup.
在一個碗中搗碎香蕉,加入亞麻籽蛋漿、椰奶和剩餘的楓糖漿攪拌均勻。
Step 4
Whisk together the remaining flour and oats in a large bowl with the baking powder, baking soda, Regency® Green Cardamom Powder and Regency® Ceylon Cinnamon Powder with a pinch of salt.
在一個大碗中將剩餘的麵粉和燕麥與泡打粉、梳打粉、Regency®綠荳蔻粉和Regency®錫蘭肉桂粉一起攪拌,並加入少許鹽。
Step 5
Pour the wet ingredients into the dry and stir together until just combined. Fold in the pineapple.
將濕材料倒入乾材料中攪拌均勻,再加入切好的菠蘿混合。
Step 6
Divide the batter between the muffin cases, then top the muffins with the crumble mixture which we made in step 1.
將麵糊倒入鬆餅模,然後在鬆餅上撒上第一步整好的脆脆。
Step 7
Transfer to the oven and bake for 20 minutes or until a toothpick inserted into the centre of the muffins comes out clean. Leave to cool completely, then can serve!
放入焗爐中焗20分鐘,或直到將牙籤插入鬆餅中心取出乾淨即代表已熟透。取出後待完全冷卻即可享用!
