Thai Coconut Pumpkin Soup is what you make when you want something exotic tasting with very little effort! Let’s see how to make it😋

 

Regency® 泰式紅咖哩粉 Thai Red Curry Powder 

材料:

2湯匙 植物油

1 切粒紅洋蔥

2 切碎的蒜瓣

3湯匙 Regency®泰式紅咖哩粉

1.8公斤 南瓜(切成3厘米)

2 1/2 蔬菜湯/雞湯

400毫升 椰奶

1湯匙 魚露

 

Ingredients: 

2 tbsp vegetable oil

1 diced brown onion

2 minced garlic cloves

3 tbsp Regency®Thai Red Curry Powder

1.8kg pumpkin (chopped into 3cm)

2 1/2 cups vegetable stock/ chicken stock

400ml coconut milk

1 tbsp fish sauce

 

Step 1

在一個大鍋中用中高火加熱油,加入洋蔥和大蒜,煮2分鐘,直到變軟。 

Heat oil in a large heavy based pot over medium high heat. Add onion and garlic, cook for 2 minutes until soft.

Step 2

加入Regency®泰式紅咖哩粉,煮2分鐘,然後加入南瓜,攪拌約2分鐘。 

Add Regency®Thai Red Curry Powder and cook for 2 minutes. Add pumpkin and stir to coat in the flavours for around 2 minutes.

Step 3

留出1/4杯椰奶作為上菜時的點綴。加入湯、剩餘的椰奶和魚露,煮沸後將火調至中火,燉8分鐘,直到南瓜變軟。 

Set aside 1/4 cup coconut milk for garnish. Add stock, remaining coconut milk and fish sauce. Bring to simmer then reduce heat to medium and simmer for 8 minutes until the pumpkin is soft.

Step 4

煮好的南瓜湯使用棒狀攪拌機攪到光滑,在上面淋上預留好的椰奶,然後可以配上印度薄餅一起食用!

Blitz using stick blender until smooth. Serve topped with garnishes then can serve with roti for dunking!
