Regency® 牛至 Oregano
Regency® 馬拉巴黑胡椒 Malabar Black Pepper
材料:
2湯匙 橄欖油
4 瓣 大蒜(切碎)
1個 洋蔥(切丁)
500克/1磅 免治牛肉(或羊肉)
1/2茶匙 鹽(用於牛肉)
1 1/2湯匙 Regency® 牛至
2湯匙 番茄醬
300克 茄子(切塊約1.5 cm)
1/3杯 黑皮諾或其他乾紅酒(可加可不加)
1杯 巴斯馬蒂米/印度香米(未煮熟)
400克 罐裝鷹嘴豆(瀝乾)
400公克 碎番茄
1 1/2杯 雞湯
1 1/4茶匙 鹽(用於雞湯)
1/2茶匙 Regency® 馬拉巴黑胡椒
Ingredients:
2 tbsp olive oil
4 garlic cloves , finely minced
1 onion , diced
500g / 1 lb ground beef (or lamb)
1/2 tsp salt (for the beef)
1 1/2 tbsp Regency® dried oregano
2 tbsp tomato paste
300g eggplant (cut into 1.5 cm cubes)
1/3 cup pinot noir or other dry red wine (optional)
1 cup basmati rice , uncooked
400g can chickpeas , drained
400g can crushed tomato
1 1/2 cups chicken broth
1 1/4 tsp salt (for broth)
1/2 tsp Regency® Malabar Black Pepper
Step1
在大鍋上用大火加熱油。加入洋蔥和大蒜煮 2 分鐘。然後加入牛肉炒散至沒有血紅色。加入1/2茶匙鹽和Regency® 牛至煮 1 分鐘,再加入番茄醬煮1分鐘。
Heat the oil on a large pot over high heat. Add the onion and garlic, cook for 2 minutes. Add the beef and cook, breaking it up as you go, until you no longer see red. Add the 1/2 tsp salt and Regency® oregano. Cook for 1 minute. Add the tomato paste and cook for 1 minute.
Step 2
加入茄子,讓茄子塊浸在牛肉汁中。然後加入葡萄酒煮沸,從鍋底上至下攪拌,讓大部分紅酒蒸發。
Add the eggplant and the eggplant cubes are coated in the beef juices. Add the wine, bring it to a simmer, stir (scrape the base of the pot) then let it mostly evaporate.
Step 3
加入米飯攪拌均勻,加入剩餘的配料攪拌至煮沸。最後一次攪拌時一旦整個表面(不僅僅是在邊緣周圍)都出現小量氣泡,就蓋上蓋子,並將火力調低至中低火。
Add the rice and stir to coat. Add remaining ingredients, stir, bring to a simmer. Give it one last stir then once there are gentle bubbles all across the surface (not just around the edge), put the lid on and turn the heat down to medium low.
Step 4
將其煮 20 分鐘,期間不要打開蓋子或攪拌。液體會被米飯吸收,表面會有一層番茄。
Cook the rice for 20 minutes, no peeking, no stirring! The liquid will be absorbed by the stage though there will be a layer of tomato on the surface.
Step 5
離火後繼續蓋上蓋子靜待10分鐘,讓米飯收乾水份後即可淋上橄欖油和撒上歐芹然後食用。
Remove the pot from the stove and rest for 10 minutes (lid still on), residual liquid will be absorbed and the rice will finish cooking. Drizzle with olive oil, sprinkle with parsley then serve.
