眾所周知的柑橘皮(或稱陳皮)是一種奇特的香料,在中國尤其是南方幾乎無處不在。它們來自柑橘(橘子)的皮膚,因此味覺上與檸檬皮非常相似,不同的分別是它們較乾並陳化。這些柑橘果皮在涼爽,乾燥,黑暗的環境中陳化了5年,以充分發揮風味。通常,至少需要3年才能獲得良好的風味,而5年後,我們發現最佳風味已經營成。超過5年,柑桔皮變得越來越昂貴,對我們來說沒有明顯的味道差異……可能是由於大量假貨!柑桔皮實際上是廣東省的“三大寶藏”之一,在這裡它幾乎專門用作草藥而不是烹飪!陳皮隨著年齡的增長會變得更昂貴,因為它們的顏色會變深,失去水分。香氣極為尖銳,甜美,味道略帶苦味。我們喜歡用它們來烹飪“糖水”-廣東菜結束後的傳統甜品。
