Ginger Ale Syrup
This is a recipe for syrup which can be combined with unsweetened carbonated water to make your own ginger ale. If you love spicy ginger ale, then you might like this one. Enjoy your own arrangement, for example by substituting bay leaf with rosemary!
Tips: Before making, I’d recommend sterilizing the container you’ll be using to keep the syrup. I usually sterilize an empty glass container using boiled water. If you plan to combine syrup with already sweetened carbonated water or iced tea, please reduce the amount of sugar written in this recipe. Once made, please keep syrup in the refrigerator and consume in few days.
Recipe: Ginger Ale Syrup
Serving: 4 to 5
- 120g fresh ginger
- 120ml water
- 100g cane sugar (you can of course use other types of sugar. If you use brown sugar, the syrup will come out darker in color)
- 2 tablespoon honey
- 6 pcs cubeb peppercorns
- 3 cloves
- 2 green cardamom pods
- 1 cinnamon stick
- 1 bay leaf or substitute with rosemary for a more acidic flavour
- 1 teaspoon lemon juice
- Grate the ginger and place in a cooking pot.
- Add all the other ingredients except lemon juice into the pot. Gently boil for 10 minutes over low heat. Skim off the scum as it forms.
- Turn off the heat and add the lemon juice. Allow to cool down.
- Once cooled down, remove the spices using a strainer. Squeeze the last bit of syrup out from the spices. Transfer the syrup into a clean glass container. Discard the spices.
- You now have your home-made ginger ale syrup. Combine with carbonated water to make you delicious ginger ale. Alternatively, mix with iced tea and enjoy ginger ale tea. I usually add 2 to 3 tablespoons of syrup in a glass filled with cold sparking water.
