布朗迪就係太妃糖棒,同布朗尼(Brownie)嘅質感十分相似。布朗尼英譯就是啡色的甜點,含有濃濃巧克力,口感非常濃郁偏甜;而布朗迪則是外表呈現金黃色,材料無咗朱古力,而係以太妃糖替代而成,口感扎實外表更脆。

Brownies is a brown-coloured dessert that contains thick chocolate, which is very rich and sweet; while Blondies is golden in appearance, the material is chocolate-free, and is replaced by toffee, with a solid taste and crisper appearance.

125克 無鹽牛油
1杯 黃糖
1隻 蛋
1條 Regency®雲呢拿籽
1杯 中筋麵粉
1/4茶匙 鹽
配料 - 可加入自己喜歡的配料:
1杯 白巧克力粒
1/2 杯 Regency®核桃(切碎)
選加:
1/4茶匙 海鹽粒
Ingredients:
125g unsalted butter
1 cup light brown sugar
1 large egg
1 Regency® Vanilla Beans
1 cup all-purpose flour
1/4 tsp salt
Add ins - Anything you want:
1 cup white chocolate chips
1/2 cup Regency® Walnuts

Instructions
Step 1
將焗爐預熱至180°C。在20厘米/8寸的方形平底鍋上塗上牛油,並舖上烘焙紙。將核桃舖在托盤上焗5分鐘,然後取出並冷卻備用。
Preheat the oven to 180°C. Grease a 20 cm/8" square pan with butter and line with baking paper. Spread the walnuts on a tray and roast for 5 minutes. Remove from the oven and cool.
Step 2
將牛油加入銀色平底鍋中,用中高火加熱。溶化後,將火調至中火,使其慢慢煮3至4分鐘,時不時攪拌(會起泡沫),直到有堅果味,當你看到牛油中有金黃色的斑點,立即將牛油和所有金黃色點點倒入碗中。
Place the butter in a silver saucepan over medium high heat. Once melted, lower the heat to medium so it's simmer gently. Simmer for 3 to 4 minutes, stirring every now and then (it will go foamy), until it smells nutty and you see little golden specks in the butter. Immediately pour the butter and all the golden bits into a bowl.
Step 3
將糖加入熱牛油中,用木勺攪拌,然後冷卻3分鐘。加入雞蛋和Regency®雲呢拿籽,攪拌均勻。再加入麵粉和鹽混合均勻。
Add the sugar into the hot butter and mix to combine using a wooden spoon. Leave to cool for 3 minutes. Add the egg and Regency® Vanilla Beans, mix until combined. Add the flour and salt, and mix to combine.
Step 4
現在應該會出現一個十分厚實、差不多可以卷起來的麵糰。然後加入朱古力粒和Regency®核桃,然後混合。
It will be very thick, almost like roll-able cookie dough. Add the chocolate chips and Regency® Walnuts and mix through.
Step 5
倒入準備好的平底鍋,塗抹至光滑。焗25分鐘或直到邊緣略帶金色,表面有薄薄的“裂紋”層。
Scrape into the prepared pan, spread and smooth the surface. Bake for 25 minutes or until the edges are lightly tinged with gold and the surface has a paper thin "crackly" layer.
Step 6
在平底鍋中靜待10分鐘後再取出放上砧板,再冷卻至少10分鐘(否則仍然有點太軟和黏黏的),然後撒上海鹽粒,切成16個方塊或9個巨型方塊即可享用!
Rest in the pan for 10 minutes before lifting onto a cutting board. Cool for at least another 10 minutes (else it's still a bit too soft and smeary), sprinkle with salt flakes. Cut into 16 squares or 9 giant squares, then devour!
