今次呢個食譜係用焗爐整嘅墨西哥餡餅!真心超!簡!單!用焗爐可以一次過整好多個,唔需要一個一個慢慢煎~今次嘅食譜用咗免治牛肉做餡,你亦都可以根據你自己嘅喜好用雞肉、火雞、羊肉或豬肉代替。
This is a handy recipe for crispy quesadillas baked in the oven. Which means you can make many at a time instead of pan frying one by one! Stuffed with taco beef mince for this recipe though you can use chicken, turkey, lamb or pork as long as you like it!

材料:
1磅 免治牛肉
4塊 墨西哥餡餅皮(玉米餅)
2杯 芝士
適量 番茄醬
適量 粟米和豆
適量 橄欖油
Ingredients :
1 lb Beef mince
10 grams Regency® Taco seasoning
4 pcs Flour tortillas
2 cups Cheese
Little bit of Tomato paste
Little bit of Corn and beans
Little bit of Olive oil
Step 1 - Beef filling :
在平底鍋中加入一些橄欖油,用中高火加熱,然後將免治牛肉加入平底鍋中炒散。當開始變熟時,加入Regency® 墨西哥捲餅調味料並煮1分鐘。
Add some olive oil to pan. Heat over medium-high heat and add the beef to pan. Then when the red (raw) colour is just about gone, add the Regency® Taco Seasoning and cook it for 1 minute which will bring out the flavour.
Step 2 :
加入番茄醬,再攪拌 1 分鐘煮出酸味。將粟米、豆類和水攪拌均勻,水會濕潤內餡但不會使其水汪汪。
Add the tomato paste and stir for another 1 minute to cook off the sour raw flavour. Stir in the corn, beans and water. The water will “juice up” the filling a bit without making it watery (which will compromise crispiness).
Step 3 - Assemble Quesadillas :
將餡料冷卻15分鐘(餡料太熱的話,水蒸氣會令玉米餅裡面過於濕潤而不酥脆)然後將餡料均勻平鋪在每個玉米餅的一半上,上面放上芝士。
Cool the filling for 15 minutes (If it’s too hot, it will steam inside the quesadillas which makes the tortilla soggy) Then spread the filling across half of each quesadilla and top with cheese. Spread evenly to make the quesadillas as flat as possible.
Step 4 - Prepare for baking :
在烤盤上塗上1茶匙橄欖油,然後將玉米餅放在托盤上。 在表面淋上油,然後再塗抹在表面和側面。油對烤箱烘烤的酥脆性至關重要!
Grease a tray with 1 teaspoon olive oil, then place the quesadillas on the tray. Drizzle the surface with oil then spread across the surface and sides. Oil is essential for oven baked crispiness!
Step 5 - Double Flip Bake :
在焗爐中烘烤8分鐘 (220°C / 425°F),翻轉後烘烤5分鐘,然後再次翻轉,再烘烤2分鐘或直到它金黃色和酥脆。最後將墨西哥餡餅切半,然後配上你的蘸醬/配料即可食用。
Bake in a hot oven for 8 minutes (220°C / 425°F) Flip, bake for 5 minutes, then flip again and bake for a further 2 minutes or until it is golden and crispy. Finally, cut the quesadillas in half then serve with your dipping sauce / toppings of choice.
