Tips on buying quality cinnamon sticks

Our recommendation is to to buy as fresh whenever possible, and also whole. Powdered cinnamon is easily diluted, as lesser varieties of cinnamon can be used, or cinnamon from very old crop that has nearly no flavour left. More detail can be found here. Good quality cassia cinnamon sticks come from southern china on the western tributaries of the pearl river. Here, the sticks have a sweet and spicy flavour unique to Chinese cinnamon. They are also highly concentrated in essential oils, hence the flavour is much stronger and highly distinctive.
