Tips on buying quality fennel seeds

Fennel seeds come in all varieties, which nutrition wise are very similar, but taste wise have many difference. It’s not necessary that the best looking variety also tastes the best. Some people prefer the look of the “Indori Fennel Seeds” originated in India, whereas at Regency we feel that this variety has a slightly harsh flavour inside, and does not match with many cuisines flavour profiles. We prefer the “Green Jumbo Grade” Fennel seeds, which we find are more versatile and easier to cook with. These are also the same Fennel Seeds that are popularly used in India as an natural mouth freshener.
