Industry Knowledge | Sumac is the essential spice in Middle-Eastern dishes. It's vastly popular throughout the region, as well as parts of Central Europe. It is used as the main ingredient to add the sour flavour to dishes, where other cuisines tend to use Lime, Lemons or Tamarind instead. The sour flavour is sumac is balanced out by it's berry-like notes, which taste more fruity. It's commonly used as a powder rubbed onto meats and kebabs before grilling. It's also often mixed with other dried herbs and sesame to make the popular spice blend Zaatar. Sumac is also one of the most ancient spices, and there are documented examples of the usage by the Ancient Romans. Sumac is now cultivated around the world, but we find that the variety originating from Lebanon tastes the best. After all, Lebanon is also where the spice is most popular. Here, it takes on a more crimson red colour, and the flavours are much stronger and wilder.
