Recipe: Lentil Soup with Allspice

Lentil Soup with Allspice

I was checking what’s on sale on Regency’s site, and the first item that was on the list was allspice. I use allspice for quite a few dishes from oven baked chicken drumsticks to tomato-based Indian curry. When I first heard of allspice, I thought it was a blend of spices. But actually, they are dried unripe berries! Once you smell its aroma, you know why they were given the name, allspice. This aromatic spice is very useful and I use this every time I make tofu burger. Today I like to share a recipe for tomato-based lentil soup using allspice. … keep reading

Recipe: Doner Kebab

Dorne Kebab

My husband and I text each other during the day using Wechat. Around 3 or 4pm, I often ask him, “What did you have for lunch?” This is to avoid making the same kind of dish for dinner. One day, he replied saying “Kebab.” Aww, kebab. I haven’t had that for awhile. Then I thought to myself, “Can’t I make that at home?” So I searched for a recipe which doesn’t use an oven (We didn’t have an oven until last summer).  Then I found a doner kebab recipe shared by a Japanese woman living in Bursa, Turkey. This came … keep reading

Allspice – spice blend or a spice on its own?

Upon hearing the name, most people imagine that Allspice is a blend of spices. Actually Allspice is the dry fruit of the Allspice tree Pimento Dioica. Allspice is one of the few New World spices; it’s an evergreen tree native to Central America and Great Antilles. The fruit is picked while unripe and then dried in the sun. Allspice has a complex flavor of cinnamon, nutmeg and cloves, but much spicier than if you were to mix the three spices together. Christopher Colombo has found this spice on his quest for spices (black pepper in particular) in America. Misled by … keep reading

Regency explores the spice blend Ras El Hanout

ras el hanout whole spices

One item that’s recently caught our attention is the Moroccan spice blend Ras El Hanout. It’s used throughout North Africa as a popular spice blend (not to be confused with Berbere, a similar looking but altogether different blend). Being a blend, it’s susceptible to many impurity problems that are widespread in the spice trade. Traders often blend in cheap ingredients that otherwise they would be ashamed to sell whole, as we illustrated in our research of garlic powder dilution. Ras El Hanout is even more susceptible, because it’s a blend of many spices. Not only can poor quality items be … keep reading
