Cassia is one of the most well known spices in the world! Commonly known in the US, and Europe as Cinnamon, this spice actually comes from the INDONESIAN bark known as Cassia. Our Cassia Cinnamon sticks are the premium version to the ordinary variety. They are deskinned, trimmed, and hand selected to provide the strongest sweet and spicy flavour, reaching their full potential. Directions for use Use whole sticks directly, no need to grind. If you need to grind, then use a Microplane or electric spice grinder. Cassia cinnamon powder works great in baked desserts, and also to lightly spice curries.

Industry Knowledge Cinnamon comes in a multitude of varieties, and of those ordinarily available to consumers, Cassia Cinnamon ranks amongst the most popular. Strictly speaking, this cinnamon is in fact Cassia, a close relative within the Spice Kingdom. True cinnamon tends to be far too strong to cook with, so consumers prefer the friendlier and milder taste brought about by Cassia. Of the hundreds of Cassia varieties available, our specific Cassia Cinnamon variety has it's own unique benefits. This season, Regency prefers Cassia Cinnamon sticks from Central Indonesia, which pair together sweetness and spice together in an enchanting fashion. It was said that usually Chinese Cassia was much more potent, but as the decades have passed, Indonesian Cassia is often superior in terms of taste as well as looks. It is also more aromatic than the normal varieties and stronger than its Malaysian or Vietnamese Cassia counterparts, for those who want an even greater burst of flavour.
