Industry Knowledge | The Laurel tree has been cultivated since the beginning of recorded history, but is often kept a hidden secret from most - it is after all the best variety of the commonly found Bay Leaves. In some countries the Laurel wreath is used as a symbol of great accomplishment. These Bay Leaves first originated in Asia but later on their popularity spread to the Mediterranean. Turkish Laurels carry a special flavour profile which is much softer and more pleasant to the taste, lending themselves to be the perfect addition to carefully prepared soups, stews and other delicacies. These Laurels are exclusively what we use at Regency, ensuring that our Bay Leaves impart a much stronger taste than ordinary varieties, so the suggested usage is one or two leaves per family sized portion. Bay Leaves are commonly sold as both green and brown pieces - when buying it is important to buy and use only green pieces, as brown indicates the leaves are older and therefore much less flavourful.
