They're an exciting unique flavour that's recently been picked up by foodie magazines around the world. We really love them as an alternative to Vanilla in ice creams and custards. Much like Vanilla though, Tonka Beans are an exotic, spice treasure. Luckily, a little bit of Tonka also goes a very long way. One bean is enough to flavour a batch of 24 cupcakes by itself! Industry Knowledge The white powder visible on Tonka beans is parts of their rich volatile oils seeping out. The more white on a tonka bean means a sharper, stronger flavour. Tonka bean quality can also be inspected by their size: look for big sized beans over 2.5cm long, roughly 1 gram each. Small beans are not matured enough to have enough flavour.
