Long Pepper is a spice that has started to be rediscovered in fine cooking. Much more expensive than ordinary Black Pepper, Long Pepper also has slight chocolate and chilli notes to it. In fact, it was the original premium spice used to flavour Indian cooking thousands of years. Industry Knowledge The Long Pepper has been used for centuries in Mediterranean, African, Indian, and Indonesian cooking, although it has nearly fallen into obscurity in the past few hundred years. The taste is very similar to regular Black Peppercorns, as a relative of the spicies, but with a much hotter taste and an almost earthy, sweet overtone. When broken or ground up it imparts an even greater pungency to food.
Long Pepper is available as a few select species. Of these, Regency has found the one native to Java, Indonesia, to be the most flavourful. They contain suitable amounts of their essential oils and alkaloids (naturally occuring chemical compounds) which allow the Long Pepper to spread it's unique flavour profile in cooking without being too overpowering.
