Cinnamon is one of the most well known spices in the world! But most Cinnamon sold is actually Cassia Cinnamon, not True Cinnamon. Cassia Cinnamon, fine in it's own right, is blown out of the water with sweetness by this Sri Lankan Cinnamon. Sri Lankan True Cinnamon comes in many grades, each regulated by rigid ISO standards. Commonly sold True Cinnamon is sold in C5 quality - thick long sticks. However, the finest is our special Alba grade Ceylon Cinnamon. Delicate, thin, layer upon layer on fine perfuming Cinnamon. It's a pastry chef's dream cinnamon, and the best in the world - although much more expensive than it's Cassia counterpart. Freshly grind to use - this Cinnamon can even be crushed with your bare hands, but we suggest using a pestle and mortar. You can even infuse the taste and aroma from single sticks by stirring in teas, coffees, and liquid based desserts. Also known as: True Cinnamon, Tuj, Ceylon Cinnamon, cinnemon, cinnoman

Directions for use Use whole sticks directly, no need to grind. If you need to grind, then use a Pestle and Mortar. Cassia cinnamon powder works great in baked desserts, and also to lightly spice curries.
