Brine Spices are an ingenius way to infuse flavours into often very simple-looking food. Works perfectly on simple meats, but this particular Chinese Brine blend is best when used with various types of whole fish. Mix about 40 grams of brine mix per 1 litre liquid. Use enough liquid to fully submerge your ingredient, and leave to "brine" for approximately 2 hours per 1kg. E.g. if you have 500 grams of fish, brine for 1 hour is enough. Our brine spices are all whole to help with infusion of flavours and also avoid too much being stuck to the surface of your meat / fish after brining. There is already sugar and salt mixed in, so you just need to mix water!

Directions for use Mix 40 grams per 1 Litre of liquid to make your brining solution. Use enough brining solution to fully submerge your meat / fish. Let it sit underwater for 2 hours per 1kg of meat. Then remove, scrape off the brine and cook.
